This Asian-Inspired Healthy Orange Chicken is an easy weeknight meal! This healthier version is made with skillet cooked chicken instead of fried along with an medley of peppers. Did I mention it also makes great meal prep?

Healthy Orange Chicken

Ingredients Needed For Healthy Orange Chicken

  • Boneless Skinless Chicken Breasts
  • Bell Peppers
  • Olive Oil
  • Sea Salt
  • Black Pepper
  • Garlic Powder
  • Vegetable Oil or Canola Oil
  • Garlic
  • Ginger
  • Orange Juice
  • Dark Brown Sugar
  • Rice Wine Vinegar
  • Soy Sauce
  • Chili Garlic Sauce
  • Cornstarch
  • Sesame Oil
  • Jasmine Rice
  • Broccoli

Healthy Orange Chicken

How to Make Healthy Orange Chicken:

This Orange Chicken is really simple and can be made in under 30 minutes! First, in a large skillet, heat the olive oil over medium-high heat. Add in the cubed chicken breast and bell peppers. I used 3 bell pepper halves or 1.5 bell peppers. Season with garlic powder, salt and pepper.

Once the chicken and peppers are cooking, you can get started on the Orange Sauce. In another, small to medium skillet or pan, heat the canola or vegetable oil with the minced garlic and grated ginger. Cook for a minute or two until fragrant.

Next, add in the orange juice, soy sauce, brown sugar, rice wine vinegar and chili garlic if desired. Stir and bring to a low boil, reducing the heat if necessary. In a small bowl, whisk together the cornstarch and water. Slowly whisk into the Orange Sauce. Continue stirring until the mixture starts to thicken. Stir in the sesame oil.

Meanwhile, the chicken and peppers should be cooked. Test a piece of chicken to be sure. Once the chicken is ready, pour the sauce over the chicken and peppers and stir. Let cook for a few minutes to incorporate the sauce. In the meantime, cook the jasmine rice and the steam the broccoli. I used the 90-second jasmine rice but conventional rice is fine too.

Serve with rice and steamed broccoli or divide among resealable containers for weekly meal prep!

Ingredients

  • 1 lb boneless skinless chicken breast, cubed
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 1/2 orange bell pepper, chopped
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper
  • 16 oz jasmine rice (or 2 90 Second Pouches)
  • 12 oz broccoli florets

Orange Sauce

  • 1 tbsp canola oil or vegetable oil
  • 1 garlic clove, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup orange juice
  • 1/2 cup brown sugar
  • 1/4 cup rice wine vinegar
  • 1/4 cup soy sauce
  • 1 tsp chili garlic sauce (optional)
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 tbsp cold water

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add in the chicken, bell peppers, garlic powder, salt and pepper. Stir together and let cook.
  3. In a separate skillet or pan, heat canola oil with the minced garlic and grated ginger.
  4. Add in the orange juice, brown sugar, soy sauce, rice wine vinegar, chili garlic sauce.
  5. Bring to a low boil, reduce heat if necessary,
  6. In a small bowl, whisk together the cornstarch and cold water.
  7. Slowly whisk into the orange sauce.
  8. Continue to whisk and add in the sesame oil.
  9. Test the chicken for doneness, if good, pour orange sauce over the chicken and peppers.
  10. Cook for about 5 minutes, while preparing the rice and steamed broccoli.
  11. Serve immediately or divide into resealable meal prep containers.
  12. Enjoy!
