These Pecan Pie Squares are the perfect alternative to the traditional pecan pie! Made with shortcut baking mix and finely chopped pecans, it will be everyone’s new favorite way to enjoy pecan pie!!
This Pecan Pie Squares are generally enjoyed around the holidays at my house but I think they are a great way to enjoy pecan pie all year round!
Preheat your oven to 350 degrees and lightly grease a 13 x 9 pan with cooking spray, set aside.
In a large bowl, mix the baking mix and sugar. Then using a fork or a dough blender, cut in the butter. The butter should still be cold not room temperature or you will not receive the desired result of a crumbly mixture.
Press the crumb mixture into the bottom of the lightly greased pan. Bake for 10 – 12 minutes or until lightly browned.
When the crust is done, remove it from the oven but don’t turn the oven off just yet!
In a large bowl, mix the corn syrup, melted butter, eggs and vanilla with an electric hand mixer. Then stir in the chopped pecans.
Pour the mixture over top of the baked crust. Bake for 25 minutes.
Remove from the oven and completely cool before cutting.
Store in an airtight container.
Enjoy!
