These Peppermint Meltaways are one of my favorite cookies at Christmastime! If you love peppermint you will love these! Peppermint cookie and icing topped with crushed candy canes, it’s a peppermint lovers dream!

Peppermint Meltaways

Ingredients Needed For Peppermint Meltaways

  • salted butter
  • confectioners sugar
  • peppermint extract
  • all-purpose flour
  • cornstarch
  • milk
  • red food coloring
  • candy cane

How To Make Peppermint Meltaways

Normally I say to preheat the oven but let’s not do that just yet. This recipe needs to chill for 30 minutes but no more than 60 minutes.

In a large bowl, beat the butter, powdered sugar and peppermint extract with an electric hand mixer until creamy. Then beat in the flour and the cornstarch.

Cover the bowl with plastic wrap and refrigerate for 30 minutes. Like I mentioned before, don’t refrigerate more than 60 minutes or the dough will be too hard to work and you will need to let it come up to room temperature a little prior to shaping.

Preheat the oven to 350 degrees when you remove the dough from chilling. Line a sheet pan with parchment. Using a small cookie scoop, shape heaping teaspoonfuls of dough into round balls and place on the sheet pan.

Bake for 12 minutes or until the cookie are lightly browned on the bottoms.

Transfer to a rack to cool completely.

In a medium bowl, beat all the icing ingredients with an electric hand mixer except for the food coloring. If the icing is too stiff, add another tablespoon of milk. Once you have the desired consistency, add the red food coloring. Be careful not to add more than 2 drops or the icing will turn out electric pink! I may or may not be speaking from experience 🙂

Ice the tops of the cooled cookies and top with the crushed candy canes. I used one normal sized candy cane. If you have the little ones, you may need 2 or 3.

Store in an airtight container in the refrigerator or freezer.

Ingredients

Cookie

  • 1 cup salted butter, softened
  • 1/2 cup confectioners sugar
  • 1/2 tsp peppermint extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup cornstarch

Peppermint Icing

  • 1 1/2 cups confectioners sugar
  • 2 tbsp salted butter, softened
  • 1/4 tsp peppermint extract
  • 2 tbsp milk
  • 2 drops red food coloring

Topping

  • 1 candy cane, crushed

Instructions

  1. In a large bowl, beat the butter, powdered sugar and peppermint extract with an electric hand mixer until creamy.
  2. Beat in flour and cornstarch.
  3. Cover and refrigerate for 30 minutes.
  4. Preheat oven to 350 degrees and line a sheet pan with parchment.
  5. Shape heaping teaspoonfuls of dough into balls and place on the sheet pan.
  6. Bake for 12 minutes.
  7. Let cool completely.
  8. In a medium bowl, beat all the icing ingredients except for the food coloring until the desired consistency.
  9. Then beat in the food coloring.
  10. Ice the tops of the cooled cookies and top with crushed candy canes.
  11. Enjoy!
