How To Make Peppermint Snowballs

Pre-heat the oven to 350 degrees. In a large bowl, mix all the ingredients except for the last 3/4 cup of confectioners sugar with a fork or pastry blender. Make sure you sift the flour and confectioners sugar really helps with the consistency but it’s not required.

Mix all the ingredients until crumbly. Measure out and roll the dough into tablespoon sized balls, using cookie scoop or spoon, and place on a parchment lined sheet pan. Since the mixture is so crumbly, you will have to “mold” the until they hold together.

Bake for 15 minutes at 350. While the cookies are baking, prepare a plate or shallow dish with the remaining 3/4 cup of confectioners sugar.

Remove the cookies from the oven and roll in the confectioners sugar while they are still warm. If they cool too much, the confectioners sugar may not stick to the cookie.

Cool completely and refrigerate or freeze cookies in an airtight container.

Hope you enjoy!
