This Caprese Pesto Tortellini Salad is the perfect side dish! Cheese tortellini, mozzarella, grape tomatoes and prosciutto, all tossed in a pesto dressing. Great for BBQs or potlucks!
Ingredients Needed For Caprese Pesto Tortellini Salad
- pesto
- olive oil
- white balsamic vinegar
- refrigerated cheese tortellini
- mozzarella pearls
- grape tomatoes
- prosciutto
- fresh basil leaves

How To Make Caprese Pesto Tortellini Salad
First, cook the cheese tortellini according the package instructions, drain and let cool. Drizzle the tortellini with olive oil while cooling so it doesn’t stick together. If you don’t have tortellini, you can substitute any type of pasta.
While the tortellini is cooling, prepare the pesto dressing. In a small bowl, whisk the pesto, olive oil and white balsamic vinegar. Store bought pesto works great or you can make homemade Pesto!
In a large bowl, add cooled tortellini (or pasta), mozzarella pearls, halved grape tomatoes, chopped prosciutto and roughly chopped fresh basil leaves. Drizzle about half the dressing on top of the salad and toss. If serving immediately, use all the dressing. If placing in the refrigerator for later or the next day, reserve some the dressing and add before serving.

- 4 tbsp pesto
- 2 tbsp olive oil
- 2 tbsp white balsamic vinegar

- 8 oz refrigerated cheese tortellini
