Caprese Pesto Tortellini Salad

Pesto Dressing

  • 4 tbsp pesto
  • 2 tbsp olive oil
  • 2 tbsp white balsamic vinegar

Pasta Salad

  • 8 oz refrigerated cheese tortellini 
  • 1/2 cup mozzarella pearls
  • 1/2 cup grape tomatoes, halved
  • 1 oz prosciutto, chopped
  • 1/4 cup fresh basil leaves

Instructions

  1. Cook Tortellini according to package instructions, drain and cool.
  2. In a small bowl, whisk pesto, olive oil and white balsamic vinegar.
  3. In a large bowl, add cooled tortellini, mozzarella, tomatoes, prosciutto, basil leaves and pesto dressing.
  4. Toss and Enjoy!
