Ingredients

- 6 oz pasta, cooked
- 1/4 cup pesto
- 4 oz mozzarella pearls
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1/2 red bell pepper, chopped
- 1/2 yellow bell pepper, chopped
- 1/2 green bell pepper, chopped
- 1 cup asparagus, chopped
- 1 cup baby bella mushrooms, chopped
- 1/2 cup yellow onion, chopped
- 1 medium zucchini, chopped
- Salt and Pepper to Taste
Instructions
- Cook Pasta according to box instructions, drain and set aside.
- Meanwhile, chop up all the veggies and place in a large skillet along with the olive oil and minced garlic.
- Cook over medium heat until vegetables are cooked and slightly soft, about 10 – 15 minutes.
- Add the warm pasta to the skillet with pesto and mozzarella, toss together until well incorporated.
- Serve immediately for warm pasta dinner or chill overnight for pasta salad.
