These Pistachio Cookie Bars are a luxurious twist on classic comfort. Made with creamy ricotta for a tender, melt-in-your-mouth texture, they’re studded with the nutty richness of pistachios and finished with a decadent dark chocolate drizzle.   • chocolate (I used dark chocolate)
  • heavy whipping cream

How To Make Pistachio Cookie Bars

Start by preheating your oven to 350°F and lightly greasing a 13 x 9-inch baking dish so it’s ready for the batter. Chop the pistachios in a small food processor or chopper until finely ground, then set them aside.

In a large mixing bowl, beat together the butter, ricotta, and granulated sugar until smooth and creamy. Add the egg and vanilla extract, continuing to beat until everything is well blended. Next, beat in the baking powder, baking soda, and all-purpose flour until the mixture forms a thick batter.

Fold in the chopped pistachios, keeping about ¼ cup aside for topping. Spread the batter evenly into the prepared baking dish, then sprinkle the reserved pistachios across the surface. Bake for 20 to 25 minutes, or until a toothpick inserted in the center comes out clean.

For an optional finishing touch, prepare a dark chocolate drizzle. Place the chocolate in a heat-safe bowl. In a small saucepan, warm the heavy cream and butter just until simmering, then pour the mixture over the chocolate. Let it sit for 30 to 60 seconds before whisking into a smooth ganache. Drizzle generously over the cooled bars.

Cut into squares, serve, and enjoy the rich pistachio flavor with that luxurious chocolate finish.

Ingredients

  • 1/2 cup salted butter, softened
  • 16 oz ricotta
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 1/2 cups all-purpose flour
  • 1 cup pistachios, finely chopped, divided

Optional Chocolate Drizzle

  • 2 oz chocolate (I used dark chocolate)
  • 1/4 cup heavy whipping cream
  • 1/2 tbsp butter

Instructions

  1. Preheat oven to 350 degrees and lightly grease a 13 x 9 baking dish or pan.
  2. Chop the pistachios using a small food processor or food chopper, set aside.
  3. In a large bowl, beat together the butter, ricotta and granulated sugar.
  4. Beat in the egg and vanilla extract.
  5. Beat in the baking powder, baking soda and all-purpose flour.
  6. Then mix in the finely chopped pistachios, reserving about 1/4 cup for the top.
  7. Spread the mixture into the greased baking dish.
  8. Top with the remaining chopped pistachios.
  9. Bake for 20 – 25 minutes or until toothpick comes out clean.

Optional Chocolate Drizzle

  1. Place chocolate in a heat safe bowl.
  2. Heat the heavy cream and butter in a small saucepan just until warm or a low boil.
  3. Pour the heavy cream mixture over the chocolate and let sit for 30 – 60 seconds then whisk until smooth.
  4. Drizzle over the top of the bars.
  5. Enjoy!
