- 1/2 cup salted butter, softened
- 16 oz ricotta
- 1 1/2 cups granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 1/2 cups all-purpose flour
- 1 cup pistachios, finely chopped, divided
Optional Chocolate Drizzle
- 2 oz chocolate (I used dark chocolate)
- 1/4 cup heavy whipping cream
- 1/2 tbsp butter
Instructions
- Preheat oven to 350 degrees and lightly grease a 13 x 9 baking dish or pan.
- Chop the pistachios using a small food processor or food chopper, set aside.
- In a large bowl, beat together the butter, ricotta and granulated sugar.
- Beat in the egg and vanilla extract.
- Beat in the baking powder, baking soda and all-purpose flour.
- Then mix in the finely chopped pistachios, reserving about 1/4 cup for the top.
- Spread the mixture into the greased baking dish.
- Top with the remaining chopped pistachios.
- Bake for 20 – 25 minutes or until toothpick comes out clean.
Optional Chocolate Drizzle
- Place chocolate in a heat safe bowl.
- Heat the heavy cream and butter in a small saucepan just until warm or a low boil.
- Pour the heavy cream mixture over the chocolate and let sit for 30 – 60 seconds then whisk until smooth.
- Drizzle over the top of the bars.
