Pizzelles are an Italian favorite in this house! Made with anise, lemon and butter, these cookies can be soft and chewy or crispy depending on how you like them!

Ingredients Needed For Pizzelles

  • salted butter
  • granulated sugar
  • large eggs
  • lemon rind (fresh or dried)
  • baking powder
  • anise extract
  • lemon extract
  • all-purpose flour

How To Make Pizzelles

Pizzelles are very easy to make, and don’t worry if you do not have a pizzelle iron, a waffle iron will work too! The cookies may be a little thicker but you will have the same great taste!

Let’s get started! First melt the butter in the small microwavable dish and set aside so it can cool for a few minutes. Then beat the eggs with an electric hand mixer until foamy. Add in the melted butter and sugar and beat until well incorporated.

Add in the lemon extract, anise extract and lemon rind and beat.

Then sift the flour and baking powder until the mixture.

Beat until the dough comes together, the dough will be thick but soft.

Heat your pizzelle iron or waffle iron. I wait until now to plug mine since it doesn’t take long to warm up. If yours take longer, plug when you start making the batter. Even you if you have a pizzelle iron, a waffle iron is a fun twist on the shape and texture but same taste.

Measure heaping tablespoonfuls onto your hot iron and press. Cook for 30 – 45 seconds depending on the desired crispiness. I like them soft so mine are more like 30 seconds but if you want them really crispy I would press them for one minute.

Cool the cookie on a wire rack and continue with the remaining batter. Store in an airtight container. Pizzelles keep very well in the freezer.

  • 9 tbsp salted butter, melted and cooled
  • 1 cup granulated sugar
  • 6 large eggs
  • 1 tbsp lemon rind (fresh or dried)
  • 2 tsp baking powder
  • 1 oz anise extract
  • 1 oz lemon extract
  • 2 cups all-purpose flour, sifted

Instructions

  1. In large bowl, beat eggs with an electric hand mixer until foamy.
  2. Beat in cooled melted butter and sugar.
  3. Beat in the anise extract and lemon extract.
  4. Then beat in the lemon rind, baking powder and sifted flour.
  5. Heat your pizzelle iron or waffle iron.
  6. Measure heaping tablespoonfuls of batter onto the pizzelle iron and cook for 30 – 45 seconds, depending on desired crispiness.
  7. Cool on wire rack and continue process with remaining batter.
  8. Enjoy!
