Potato Bacon Soup

This Potato Bacon Soup is warm, comforting and delicious! Pureeing the potatoes gives this soup a wonderful hearty creaminess, not to mention the smokey flavor that the bacon brings to the table!

Potato Bacon Soup

I love potato soup and this Potato Bacon Soup is no exception! Soups are really easy to make for the most part. All you really need is a large pot or dutch oven!

In a large pot, brown the bacon until crispy. Remove from the pot and set aside for now.

Add the onion and celery to the same pot and cook in the bacon grease.

When the onion and celery are soft, add the diced potatoes and chicken broth. Bring to a boil and cook until the potatoes are done or slide off a fork when poked.

Puree the potatoes with an immersion blender, transfer to a standing blender or a food processor. If you remove the soup from the pot, return to the same pot.

Note: Puree to your liking. If you like your potato soup a little chunky don’t blend as long.

Once the soup is back in the pot, add the milk and butter. Bring to a low boil and simmer for about 20 minutes.

Serve immediately and top with cheese and the bacon you set aside earlier! Add salt and pepper to taste.

Ingredients

Units Scale
  • 6 slices Bacon
  • 1 Small Onion, Chopped
  • 1 cup Celery, Chopped
  • 4 cups White Potatoes, diced or cubed
  • 32 oz Chicken Broth
  • 1 cup Milk
  • 2 tbsp Butter
  • Salt to Taste
  • Pepper to Taste

Instructions

  1. In a large pot or dutch oven, cook bacon until crispy.
  2. Remove bacon from pot, chop and set aside.
  3. Add the chopped onion and celery to the bacon grease in the pot.
  4. Cook until soft, about 5 minutes.
  5. Add the diced potatoes and chicken broth, bring to a boil.
  6. Cook until potatoes are done, about 10 minutes. Potatoes should slide off a fork when poked.
  7. Use an immersion blender or standard blender to puree the potatoes to your desired consistency.
  8. Transfer soup back to pot if you used a standard blender.
  9. Add in the milk and butter.
  10. Bring to a low boil and simmer for 20 minutes.
  11. Serve immediately topped with cheese and the chopped bacon!
