These Pumpkin Blondies are my new favorite pumpkin treat! They combine all the soft and buttery goodness of blondies and with all the goodness of pumpkin pie!
Ingredients Needed For Pumpkin Blondies
- salted butter
- light brown sugar
- large eggs
- vanilla extract
- all-purpose flour
- pumpkin puree
- pumpkin pie spice
- ground cinnamon

How To Make Pumpkin Blondies
Preheat oven to 350 degrees and lightly grease a 13 x 9 baking dish with cooking spray. In a large microwave safe bowl, melt the butter. It does not have to be completely melted into liquid but should be very soft. Using a hand mixer, beat in brown sugar.
Next, add in eggs and vanilla extract, beat until incorporated. Then mix in pumpkin puree and spices. Lastly, beat in the flour until smooth. Spread batter evenly into greased baking dish.
Bake at 350 degrees for 22 – 25 minutes or until toothpick comes out clean. Let cool before cutting.

- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 15 oz pumpkin puree
- 2 tsp pumpkin pie spice
- 1 tsp ground cinnamon
Instructions
- Preheat oven to 350 degrees and lightly grease a 9 x 13 baking dish.
- In a large microwavable bowl, melt butter.
- Using a hand mixer, blend in light brown sugar.
- Mix in eggs and vanilla.
- Blend in pumpkin and spices.
- Mix in Flour.
- Spread the batter into lightly greased baking dish.
- Bake for 22 – 25 minutes.
