These Pumpkin Oatmeal Bars are a soft and chewy treat! They combine all the buttery goodness of blondies and with all the goodness of oatmeal cookies! This one bowl recipe is ready in less than an hour!

- salted butter
- light brown sugar
- large eggs
- vanilla extract
- pumpkin puree
- pumpkin pie spice
- ground cinnamon
- all-purpose flour
- old fashioned oats or quick oats

How To Make Pumpkin Oatmeal Bars
Preheat oven to 350 degrees and lightly grease a 13 x 9 baking dish with cooking spray. In a large microwave safe bowl, melt the butter. It does not have to be completely melted into liquid but should be very soft. Using a hand mixer, beat in light brown sugar.
Add in the eggs and vanilla extract, beat until incorporated. Then mix in pumpkin puree and spices until smooth. Next, beat in the flour until smooth. Lastly, stir in the oats.
Spread batter evenly into greased baking dish. Bake at 350 degrees for 28 – 30 minutes or until toothpick comes out clean. Let cool before cutting. Store in an airtight container.

Ingredients
- 1 cup salted butter, melted
- 2 cups light brown sugar, packed
- 2 large eggs
- 2 tsp vanilla extract
- 15 oz pumpkin puree
- 3 tsp pumpkin pie spice
- 1 tsp ground cinnamon
- 2 cups all-purpose flour
- 2 cups old fashioned oats or quick oats
Instructions
- Preheat oven to 350 degrees and lightly grease a 9 x 13 baking dish.
- In a large microwavable bowl, melt butter.
- Using a hand mixer, blend in light brown sugar.
- Mix in eggs and vanilla.
- Blend in pumpkin and spices.
- Mix in Flour.
- Mix in oatmeal.
- Spread the batter into lightly greased baking dish.
- Bake for 28 – 30 minutes. or until toothpick comes out clean.
