Easy Pumpkin Scones

Instructions

  1. Preheat oven to 400 degrees.
  2. Add flour, sugar, baking powder, pumpkin pie spice and cinnamon to food processor and pulse to combine the dry ingredients.
  3. Cut the cold butter into cubes and add to dry ingredients.
  4. Pulse until mixture resembles fine breadcrumbs.
  5. Add pumpkin puree and vanilla extract, pulse until just combined.
  6. Turn dough out on to sheet of parchment paper.
  7. Pat dough out to form a 1/2 inch thick circle.
  8. Using a knife or pastry cutter, cut into 8 wedges. Separate the wedges on the parchment.
  9. Slide the parchment onto a sheet pan.
  10. Bake for 15 minutes and cool on a wire rack
  11. Enjoy!
