Red Velvet Gooey Butter Cookies

These Red Velvet Gooey Butter Cookies are sweet, soft and easy to make! This recipe uses a red velvet cake mix plus cream cheese and butter! Rolled in powdered sugar, they are a pretty and festive treat for any holiday gathering!

  • Red Velvet Cake Mix
  • Cream Cheese
  • Salted Butter
  • Vanilla Extract
  • Large Eggs
  • Confectioners Sugar

How to Make Red Velvet Gooey Butter Cookies:

If you are a red velvet lover, these cookies are for you! And you won’y believe how easy they are to make!

Pre-heat your oven to 375 and line a sheet pan with parchment. In a large bowl, mix the softened butter and cream cheese with a hand mixer.

Next beat in the egg and vanilla until well incorporated. Then beat in the dry red velvet cake mix.

Now, using a cookie scoop or tablespoon form dough into one inch balls. Then roll dough in confectioners sugar and place on parchment lined cookie sheet.

Continue with remaining dough. I baked these in two batches but if you have two sheet pans you can do them all at once. If you do them in batches, I suggest letting the sheet pan cool for a few minutes before adding the cookie dough so it doesn’t start to melt.

Bake for 11- 13 minutes, but check at the 11 minute mark. Mine were cooked perfectly by then but everyone’s oven if different.

Transfer cookies to cooling rack and continue if making in batches.

Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup salted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 box red velvet cake mix
  • 1/2 cup confectioners sugar

Instructions

  1. Preheat oven to 375 and line a sheet pan with parchment.
  2. In a large bowl, mix softened cream cheese and butter with a hand mixer.
  3. Mix in egg and vanilla extract.
  4. Mix in dry cake mix.
  5. Using a cookie scoop or tablespoon, form dough into balls and roll in powdered sugar.
  6. Place rolled cookie dough on sheet pan.
  7. Repeat with remaining dough.
  8. Bake for 11 – 13 minutes.
  9. Cool on wire rack.
  10. Repeat with remaining cookie dough if baking in multiple batches.
  11. Enjoy!
