1/2 cup salted butter, softened
1 large egg
1 tsp vanilla extract
1 box red velvet cake mix
1/2 cup confectioners sugar

Instructions

Preheat oven to 375 and line a sheet pan with parchment.
In a large bowl, mix softened cream cheese and butter with a hand mixer.
Mix in egg and vanilla extract.
Mix in dry cake mix.
Using a cookie scoop or tablespoon, form dough into balls and roll in powdered sugar.
Place rolled cookie dough on sheet pan.
Repeat with remaining dough.
Bake for 11 – 13 minutes.
Cool on wire rack.
Repeat with remaining cookie dough if baking in multiple batches.
