This Easy Ricotta Cake is sweet, light and perfect for entertaining. This recipe is really simple to throw together and makes two 9 inch cakes! Bring it to your next holiday gathering or picnic!

Easy Ricotta Cake

Ingredients Needed For Easy Ricotta Cake

  • yellow cake mix
  • water
  • vegetable oil or canola oil
  • large eggs
  • ricotta cheese
  • granulated sugar
  • confectioners sugar

How To Make Easy Ricotta Cake

Let’s get started! Preheat oven to 350 degrees and lightly grease two 9 inch round cake pans with cooking spray. In a large mixing bowl, prepare cake mix according to instructions on box.

Evenly divide cake mixture between the two greased cake pans, set aside. In another large bowl, beat together the ricotta, sugar and 3 eggs.

Evenly split the ricotta mixture between to the two cake pans. Pour the mixture into the middle of the pans. Bake for 50 – 60 minutes. I baked mine for 50 minutes and they were perfect. It really depends on your oven and pans, check for doneness with a toothpick.

Transfer to cooling racks. Let cool for 15 minutes and then flip out of the pan. Generously sprinkle with powdered sugar. Slice and serve.

Ingredients

  • 1 box yellow cake mix
  • 1 cup water
  • 1/2 cup vegetable oil or canola oil
  • 6 large eggs, divided
  • 15 oz ricotta cheese
  • 1/2 cup granulated sugar
  • confectioners sugar for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly grease 2 – 9 inch round cake pans with cooking spray.
  3. In a large bowl, beat together the cake mix, water, oil and 3 eggs.
  4. Evenly divide batter between the 2 cake pans.
  5. In a large bowl, beat together the ricotta, sugar and 3 eggs.
  6. Evenly divide mixture between the 2 cakes pans, pouring into the middle of the pans.
  7. Bake for 50 – 60 minutes.
  8. Transfer to racks for cooling.
  9. Generously sprinkle the cakes with powdered sugar.
  10. Enjoy!
