Roasted Baby Potatoes are the easiest side and go with everything! They take very little prep and clean up. Have leftovers? These are perfect to chop and use as breakfast potatoes!
This recipe is super easy! First, pre-heat oven to 350 degrees and line a sheet pan with foil or parchment. Arrange the potatoes on top of the foil.
Chop 2 – 3 large cloves of garlic.
Sprinkle garlic over potatoes and drizzle 2 tablespoons of olive oil. Add salt and pepper to taste.
Bake at 350 degrees for 30 – 40 minutes or until fork slides out of potato when poked.
Serve with fresh parsley or grated parmesan cheese. Use the leftovers for breakfast the next day!
