These Rum Balls are another holiday treat but perfect to serve year round! This no bake cookie is made with vanilla wafers, cocoa and, of course, rum! Soon to be a classic cookie in your house!

- vanilla wafers
- confectioners sugar
- unsweetened cocoa
- salted butter
- dark rum
- pecans

How To Make Rum Balls
My Grandma used to make these cookies and send them to us around the holidays every year! They are a classic staple on the holiday cookie tray.
First you need to ground the vanilla wafers, the finer the better. I used my food processor but if you don’t have one you can place your cookies in a resealable bag and beat with a mallet or meat tenderizer.
Now, place all the ingredients in a large bowl except for the chopped pecans and mix by hand until the dough comes together. The dough can be crumbly but it needs to stick together to roll into a ball.
Scoop out enough dough to roll into 1 inch balls. Then roll the ball in the chopped pecans and place on a parchment lined sheet pan or dish.
Refrigerate for 30 minutes to set and then serve.
Store in an airtight container in the refrigerator or freezer.

Cookie
- 2 cups vanilla wafers, ground (11 oz. box)
- 1 cup confectioners sugar
- 1/4 cup unsweetened cocoa
- 11 tbsp salted butter, melted
- 7 tbsp dark rum
Topping
- 1 cup pecans, finely chopped
Instructions
- In large bowl, mix the ground vanilla wafers, powdered sugar, cocoa, melted butter and rum by hand until mixture comes together.
- Place chopped pecans in a shallow dish.
- Form dough into 1 inch balls and roll in the chopped pecans.
- Place on a parchment lined baking sheet or dish and refrigerate for 30 minutes.
- Store in an airtight container in the refrigerator or freezer.
