This Slow Cooker Chicken Chili is the definition of an easy dinner! It’s lean, packed with flavor, full of veggies and very easy to make! Just dump everything into the slow cooker and go!
Ingredients Needed For Slow Cooker Chicken Chili
- boneless skinless chicken breast
- yellow onion
- bell pepper
- diced green chilis
- white beans
- diced tomatoes with green chilis
- chili powder
- garlic powder
- chicken stock or water
- frozen corn

How To Make Slow Cooker Chicken Chili
Slow cooker recipes are seriously the easiest! And a lean chicken chili is a bonus for those cold nights!
So, place all the ingredients in the slow cooker and cover with the chicken stock or water. I told you it was easy! You can always adjust the amount of chili powder to your liking. I am not into super spicy foods, so two teaspoons is just right for me but feel free to adjust!
Now, set the slow cooker to low for 8 hours and cover. When time is almost up, I use a spoon or fork and break up the chicken. Sometimes it breaks up on it’s own but I usually try to break in into smaller pieces.
Well folks, that’s pretty much it! See? So simple! Serve topped with cheese or your favorite toppings! This chili also makes great meal prep, either for the week or separate into individual servings and freeze for later!!

- 1 lb boneless skinless chicken breast
- 1 small yellow onion, chopped
- 1 bell pepper, chopped
- 9 oz diced green chilis (2 – 4.5 oz cans)
- 15.5 oz white beans (such as cannellini beans)
- 10 oz diced tomatoes with green chilis (such as rotel)
- 2 tsp chili powder
- 1 tsp garlic powder
- 2 cups chicken stock or water
- 1 cup frozen corn
Instructions
- Place all ingredients in a slow cooker.
- Set slow cooker to low for 8 hours.
- When time is almost up, use a fork to break up the chicken (if it hasn’t already).
- Serve with your favorite chili toppings.
