These Soft Pumpkin Cookies are full of spice and so easy to make! Made with a spice cake mix and cream cheese, these cookies will be perfect for your fall festivities! If desired, sprinkle with confectioners sugar!

- large egg

How To Make Soft Pumpkin Cookies
Pre-heat your oven to 375 and line a sheet pan with parchment. In a large bowl, mix the softened cream cheese and pumpkin puree with a hand mixer.
Then beat in the egg and vanilla until well incorporated. Next, mix in the dry spice cake mix.
Now, using a cookie scoop or tablespoon place dough on parchment lined sheet pan. The dough will be soft.
Bake for 11- 13 minutes, but check at the 11 minute mark. Mine were cooked perfectly by then but everyone’s oven if different.
Continue with remaining dough. I baked these in two batches. If you do them in batches, I suggest letting the sheet pan cool for a few minutes before adding the cookie dough so it doesn’t start to melt. Or use more than one sheet pan alternating bakes.
Transfer to cooling rack. Refrigerate or freeze in an airtight container, if not eating immediately.
