Spicy Roasted Tomato Gnocchi

This Spicy Roasted Tomato Gnocchi is so simple yet flavorful! Roasted tomatoes and garlic with gnocchi, Calabrian chilies and burrata perfect for an easy weeknight dinner!

Spicy Roasted Tomato Gnocchi

Ingredients Needed for Spicy Roasted Tomato Gnocchi

  • cherry tomatoes or grape tomatoes
  • garlic
  • olive oil
  • sea salt
  • black pepper
  • gnocchi
  • burrata
  • calabrian chilies
  • fresh basil leaves

How To Make Spicy Roasted Tomato Gnocchi

This recipe is not quite a one-pot meal but it’s close! First, preheat oven to 400 degrees. In an oven-safe casserole dish add to tomatoes, garlic, olive oil, salt and pepper. Make sure the tomatoes are laying in a single layer. Bake for 20 minutes.

Meanwhile, cook the gnocchi to package instructions and reserve pasta water. Remove tomatoes and garlic from oven at 20 minutes and add cooked gnocchi and Calabrian chilies, stir to combine. If you don’t like it spicy, then omit the chilies. If you like it really spicy, you can add more but I would start with a heaping teaspoon.

Next, tear burrata into large pieces and top the gnocchi. If you can’t find burrata, you can use fresh mozzarella. Place back in the oven and bake for another 10 minutes.

Remove from oven and top with chopped fresh basil and stir together. If the consistency seems a little thick, add a little of the pasta water at a time until desired consistency. Start by adding a tablespoon at a time to loosen up the pasta bit. Serve immediately!!

Ingredients

  • 1 pint cherry tomatoes or grape tomatoes
  • 5 cloves of garlic, halved
  • 2 tbsp olive oil
  • sea salt to taste
  • black pepper to taste
  • 1 lb gnocchi, cooked to package instructions
  • 4 oz burrata
  • 1 tsp calabrian chilies (optional)
  • 5 – 6 fresh basil leaves

Instructions

  1. Preheat oven to 400 degrees.
  2. Add to tomatoes, garlic, olive oil, salt and pepper to oven safe casserole dish.
  3. Bake for 20 minutes.
  4. Meanwhile, cook the gnocchi to package instructions, don’t drain and reserve pasta water.
  5. Remove tomatoes and garlic from oven at 20 minutes and add cooked gnocchi and calabrian chilies, stir.
  6. Tear burrata into large pieces and top the gnocchi.
  7. Place back in the oven and bake for 10 more minutes.
  8. Remove from oven and top with chopped fresh basil and stir together.
  9. If it seems a little thick, add a little of the pasta water at a time until desired consistency.
  10. Serve immediately.
  11. Enjoy!
