How to Make Stuffed Mushrooms:
In just a few easy steps, you can have restaurant style Stuffed Mushrooms! Preheat oven to 350 degrees and lightly grease a small baking or casserole dish. You can also use a small cast iron skillet.
Wash mushrooms and remove the stems, but don’t throw them away! Just set them aside for a second while you place the mushroom bases in a lightly greased baking dish.
Just a few more prep steps. Chop the mushroom stems and spinach, peel the garlic, and measure out the parmesan and breadcrumbs. If you have a block of fontina, shred it and set aside.
Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic, chopped mushroom stems and spinach. Cook until spinach in wilted and the stems are cooked, about 2 – 3 minutes. Remove from heat and stir in the breadcrumbs and parmesan.
Using a spoon, stuff mushrooms with all the filling. Top with the shredded fontina cheese.
Bake for 20 – 25 minutes until the cheese is bubbly. Serve immediately!
