Change up taco night with this Taco Biscuit Bake! This weeknight casserole is ready in less than an hour and will easily become a new favorite in your dinner rotation!

Ingredients Needed For Taco Biscuit Bake

  • grands biscuits
  • salsa
  • olive oil
  • lean ground beef
  • small yellow onion
  • mini bell peppers or large bell pepper
  • sea salt
  • black pepper
  • garlic powder
  • black beans
  • chopped green chilis
  • shredded jack cheese
  • cilantro (optional)
  • cooking spray

Taco Biscuit Bake

How To Make This Taco Biscuit Bake

This casserole may seem a little unconventional, it falls somewhere between a taco pizza or a taco dumpling! Seriously, it will be a new taco night favorite! Let’s make it!

Preheat oven to 350 degrees and grease a 13 x 9 casserole dish with cooking spray. Cut each of the biscuits into 4 pieces and place in the greased casserole dish. Pour salsa over biscuit pieces and toss together. Arrange biscuits in an even layer in the dish. Bake for 20 minutes.

While the biscuits are baking, heat olive oil in a large skillet over medium heat. Add lean ground beef, onions and peppers to skillet. Stir and break up the ground beef, season with salt, pepper and garlic powder. Continue stirring until beef is cooked about 10 minutes. Once the beef is ready, add the drained black beans and green chilis and stir to incorporate.

After 20 minutes, carefully remove the casserole dish from the oven and evenly spread the ground beef mixture on top of the biscuits. Top with shredded cheese, I used jack cheese but you could use cheddar or a cheddar blend. Return to the oven and bake for another 15 minutes.

If desired, garnish with cilantro. Serve immediately or cool and separate into individual containers for meal prep!

Ingredients

  • 16.3 oz grands biscuits
  • 16 oz salsa (use your favorite)
  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 small yellow onion, chopped
  • 6 mini bell peppers or 1 large bell pepper
  • 1/8 tsp sea salt
  • 1/8 tsp black pepper
  • 1/2 tsp garlic powder
  • 15.5 oz black beans, drained
  • 4.5 oz chopped green chilis
  • 8 oz shredded jack cheese
  • cilantro for garnish (optional)
  • cooking spray

Instructions

  1. Preheat oven to 350 degrees and grease a 13 x 9 casserole dish with cooking spray.
  2. Cut each of the biscuit into 4 pieces and place in casserole dish.

  9. After 20 minutes,  carefully remove the casserole dish from the oven and evenly spread the ground beef mixture on top of the biscuits.
  10. Then top with shredded cheese.
  11. Bake for another 15 minutes.
  12. If desired, garnish with cilantro.
  13. Serve immediately!
