- 16.3 oz grands biscuits
- 16 oz salsa (use your favorite)
- 1 tbsp olive oil
- 1 lb lean ground beef
- 1 small yellow onion, chopped
- 6 mini bell peppers or 1 large bell pepper
- 1/8 tsp sea salt
- 1/8 tsp black pepper
- 1/2 tsp garlic powder
- 15.5 oz black beans, drained
- 4.5 oz chopped green chilis
- 8 oz shredded jack cheese
- cilantro for garnish (optional)

Instructions
- Preheat oven to 350 degrees and grease a 13 x 9 casserole dish with cooking spray.
- Cut each of the biscuit into 4 pieces and place in casserole dish.
- Pour salsa over biscuit pieces, toss together and arrange in an even layer in the dish.
- Bake for 20 minutes.
- While the biscuits are baking, heat olive oil in a large skillet over medium heat.
- Add lean ground beef, onions and peppers to skillet.
- Season with salt, pepper and garlic powder and cook until beef is cooked about 10 minutes, stirring and breaking up the ground beef.
- Once the beef is cooked, add the black beans and green chilis and stir to incorporate.
- After 20 minutes, carefully remove the casserole dish from the oven and evenly spread the ground beef mixture on top of the biscuits.
- Then top with shredded cheese.
- Bake for another 15 minutes.
- If desired, garnish with cilantro.
- Serve immediately!
