Taco Biscuit Bake

Ingredients

  • 16.3 oz grands biscuits
  • 16 oz salsa (use your favorite)
  • 1 tbsp olive oil
  • 1 lb lean ground beef
  • 1 small yellow onion, chopped
  • 6 mini bell peppers or 1 large bell pepper
  • 1/8 tsp sea salt
  • 1/8 tsp black pepper
  • 1/2 tsp garlic powder
  • 15.5 oz black beans, drained
  • 4.5 oz chopped green chilis
  • 8 oz shredded jack cheese
  • cilantro for garnish (optional)
  • cooking spray

Instructions

  1. Preheat oven to 350 degrees and grease a 13 x 9 casserole dish with cooking spray.
  2. Cut each of the biscuit into 4 pieces and place in casserole dish.
  3. Pour salsa over biscuit pieces, toss together and arrange in an even layer in the dish.
  4. Bake for 20 minutes.
  5. While the biscuits are baking, heat olive oil in a large skillet over medium heat.
  6. Add lean ground beef, onions and peppers to skillet.
  7. Season with salt, pepper and garlic powder and cook until beef is cooked about 10 minutes, stirring and breaking up the ground beef.
  8. Once the beef is cooked, add the black beans and green chilis and stir to incorporate.
  9. After 20 minutes,  carefully remove the casserole dish from the oven and evenly spread the ground beef mixture on top of the biscuits.
  10. Then top with shredded cheese.
  11. Bake for another 15 minutes.
  12. If desired, garnish with cilantro.
  13. Serve immediately!
