This Tomato and Garlic Orecchiette comes together in minutes for an easy weeknight dinner! Cherry tomatoes and garlic sautéed in olive oil and white wine tossed with pasta and topped with mozzarella cheese! What could be better than that?

- Cherry Tomatoes
- Garlic Cloves
- Olive Oil
- Garlic Powder
- White Wine
- Fresh Basil
- Fresh Italian Parsley
- Grated Parmesan Cheese
- Shredded Mozzarella Cheese
- Salt and Pepper

How to Make Tomato and Garlic Orecchiette:
Let’s get start on this easy and cheesy weeknight pasta dish! In a medium or large pot, cook the pasta according to package instructions. I used Orecchiette but really any pasta noodle will work with this dish.
Meanwhile, in a large skillet, heat the oil, minced garlic and cherry tomatoes. Sprinkle with the garlic powder, salt and pepper. Cook until the garlic is fragrant and tomatoes are starting to blister, about 3 – 4 minutes.
Add in the white wine, chopped basil and chopped Italian parsley. Cook for another 3 – 4 minutes, you may need to reduce the heat if the tomatoes start to splattered.
By now the pasta should be ready, drain and add to the skillet with the tomatoes and stir. Add the parmesan cheese and toss. Lastly, top with the mozzarella and cook until melted. If your skillet has a lid, you can top it to speed up the melting if desired.

Tomato and Garlic Orecchiette

Ingredients
- 8 oz orecchiette or pasta of your choice
- 2 tbsp olive oil
- 2 cups cherry tomatoes, halved
- 3–4 large garlic cloves, minced
- 1/2 tsp garlic powder
- 1/4 cup white wine (i used pinot grigio)
- 2 tbsp fresh basil, chopped
- 2 tbsp fresh italian parsley, chopped
- 2 tbsp grated parmesan
- 1 cup shredded mozzarella
- 1/8 tsp sea salt
- 1/8 tsp black pepper
Instructions
- In a medium pot, prepare pasta according to package instructions.
- Meanwhile, in a large skillet on medium heat, heat olive oil, garlic and tomatoes. Add garlic powder and salt and pepper to taste.
- Cook until the garlic is fragrant and tomatoes are starting to blister, about 3 – 4 minutes.
- Add white wine, basil and parsley and cook for another 2 – 3 minutes.
- Drain pasta and add to skillet, stir.
- Add parmesan and toss.
- Top with mozzarella and heat until cheese is melted or cover skillet with a lid to speed up the melting.
- Serve immefiately!
