This Vegetarian Black Bean Skillet is a super easy and filling one pot meal! Made with bell peppers, onions, tomatoes, rice and, of course, black beans, this cheesy dish makes a great weeknight meal!
Ingredients Needed For Vegetarian Black Bean Skillet:
- Olive Oil
- Garlic Cloves
- Green Bell Pepper
- Red Bell Pepper
- Yellow Bell Pepper
- Yellow Onion
- Black Beans
- Diced Tomatoes
- Shredded Cheese
- 90 Second Rice
- Garlic Powder
- Chili Powder
- Salt
- Pepper

How to Make Vegetarian Black Bean Skillet:
This skillet is such an easy weeknight one pot meal! The less dishes to clean the better, right?!
Heat the olive oil in a deep skillet over medium-high heat. If you have one with a lid, that would be preferred to use later to melt the cheese, but it’s not necessary.
Add the minced garlic, chopped peppers and onions to the skillet. Cook for about 5 – 10 minutes, until the peppers begin to soften.
Mix in the drained black beans, diced tomatoes, rice and the spices. Stir to combine. The precooked 90 second rice is great in this dish, no long wait for the rice to cook! Bring the mixture to a low boil and turn down to medium heat. Cook for about 10 minutes, until liquid from the tomatoes has been absorbed and the rice looks fluffy.
Top with the shredded cheese of your choice. In this recipe I am using a Mexican cheese blend, but you can use really any type of shredded cheese.
You can cover the pan with the lid to speed up the melting but it’s not necessary. The cheese will melt without accelerating the process 🙂

- 1 tbsp olive oil
- 4 garlic cloves, minced
- 1/2 green bell pepper, sliced
- 1/2 red bell pepper, sliced
- 1/2 yellow bell pepper, sliced

- 15.5 oz black beans, drained
- 28 oz diced tomatoes
- 8.5 oz 90 second rice
- 8 oz shredded cheese
- 1/2 tsp garlic powder
- 1/2 tsp chili powder
- salt and pepper to taste
Instructions
- Heat a deep skillet over medium-high heat.
- Add olive oil, minced garlic, peppers and onion.
- Cook until peppers begin to soften, about 5 – 10 minutes.
- Add drained black beans, diced tomatoes, rice, chili powder, garlic powder, salt and pepper.
- Stir to combine and bring to a low boil. Cook for about 10 or so minutes until rice fluffs up.
- Top with cheese and cover to melt the cheese faster, if desired.
