This Vegetarian Sweet Potato Chili is a sweet and spicy take on traditional chili. Made with onion, peppers, tomatoes and black beans, this chili does not disappoint in flavor or spice!
Ingredients:
- Sweet Potatoes
- Yellow or White Onion
- Bell Pepper
- Diced Tomatoes
- Black Beans
- Green Chilis
- Fresh Cilantro
- Olive Oil
- Garlic Powder
- Chili Powder
- Salt
- Pepper
- Water
How to Make Vegetarian Sweet Potato Chili:
Just like most chili recipes, this is super easy but takes a little prep to chop all the veggies. I used orange and purple sweet potatoes, but you can use whatever you have on hand. I also keep the skins on but you can peel them.
So, once you have diced the potatoes and chopped the onion and bell pepper, you are ready to go! Use a large stock pot, heat the olive oil over medium heat.
Add the onions and bell pepper, cook until the onion is soft and fragrant. Then add the diced tomatoes, green chilis, drained black beans and the sweet potatoes. Top with garlic powder, chili powder and salt and pepper to taste. If desired, add fresh chopped cilantro.
Add 1.5 to 2 cups of water, depending on how many potatoes you used, you want enough water to barely top the potatoes.
Stir everything together and bring to a boil, then reduce to a simmer and cover. Cook for 45 minutes, potatoes should be tender but not mushy.

Heat olive oil in large pot over medium heat.

Add in chopped onion and bell pepper, cook until onion is soft and fragrant.

Add in the diced tomatoes, black beans, green chilis and diced sweet potatoes.

Top with the garlic powder, chili powder, salt, pepper and chopped fresh cilantro, if desired.

Add about 1.5 – 2 cups of water, just enough to reach the top of the sweet potatoes, stir.

Bring to a boil and then reduce to simmer.

Cover and simmer for 45 minutes.

Serve with your favorite chili toppings.

- For the sweet potatoes, you can mix and match or just use one type of potato.
- Using the potatoes with skins or peeled is up to you.
- Any variety of bell pepper works for this recipe, I used small peppers (about 7 – 8) or one large bell pepper.
