This Vegetarian Three Bean Chili is a hearty take on traditional chili. Made with onion, peppers, tomatoes and, of course, beans, this chili does not disappoint in flavor or spice!

- bell peppers (or mini sweet bell peppers)

- diced tomatoes
- kidney beans
- black beans
- garbanzo or white beans
- diced green chilis
- water

How To Make Vegetarian Three Bean Chili
This chili is so flavorful and simple to make! Good chili doesn’t have to cook all day. Let’s get started! Chop the peppers and onion. In a large lightly greased saucepan, dutch oven or stockpot, add the olive oil, chopped onion and peppers. Season with sea salt and black pepper and cook on medium-high heat for about 5-10 minutes or until the onion and peppers begin to breakdown.
When the peppers and onions are ready, add the diced tomatoes, beans, green chilis, water and spices.
Stir well and bring to a low boil. Then partially cover, popping the lid up on one side, and reduce heat. Simmer for an hour.
Serve with your favorite toppings and enjoy!

- 1 tbsp olive oil
- 1/2 large yellow onion, chopped (about 1 cup)
- 2 – 3 bell peppers, chopped (or 12 mini sweet bell peppers)
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- 28 oz diced tomatoes
- 15 oz kidney beans, drained
- 15 oz black beans, drained
- 15 oz garbanzo or white beans, drained and rinsed
- 8 oz diced green chilis
- 1 cup water
- 2 tsp chili powder
- 1 tsp garlic powder
- cooking spray
Instructions
- Lightly grease a large dutch oven, saucepan or stockpot with cooking spray.
- Add the olive oil, chopped onion and peppers and cook over medium-high heat.
- Season with salt and pepper and cook for 5 – 10 minutes until the onions and peppers begin to break down.
- Add tomatoes, green chilis, beans, water and spices and stir well.
- Bring to a low boil, then cover and simmer for an hour.
- Enjoy with your favorite toppings!
