  1. Lightly grease a large dutch oven, saucepan or stockpot with cooking spray.
  2. Add the olive oil, chopped onion and peppers and cook over medium-high heat.
  3. Season with salt and pepper and cook for 5 – 10 minutes until the onions and peppers begin to break down.
  4. Add tomatoes, green chilis, beans, water and spices and stir well.
  5. Bring to a low boil, then cover and simmer for an hour.
  6. Enjoy with your favorite toppings!
