Watermelon Feta Salad is the perfect summer salad! Great as a side, appetizer or main course! If you desire, you can add a protein to this light salad, maybe a prosciutto. Works great as a picnic salad too! Serve with a Lemon Vinaigrette.

- watermelon
- fresh blueberries
- crumbled feta
- lemon vinaigrette or your favorite dressing

How To Make Watermelon Feta Salad
This salad is really easy to assemble, first start with slicing the watermelon. If you are pressed for time, you can find cubed or sliced watermelon in your local produce section.
I love a good sugary, seedless watermelon! Living in Florida, the small round seedless watermelons are very easy to find in the summer. I think it’s the perfect summer fruit!
Easiest way to slice a watermelon, cut in half and then quarters. Run the knife around the edge of the quarters and slice across the top the form wedges. From there you can slice into cubes if desired.
That’s really the bulk of the prep! When you are ready to eat, arrange on a platter the arugula, watermelon, feta and blueberries. Then top with a Lemon Vinaigrette or your favorite vinaigrette.

- 2 cups arugula
- 2 cups watermelon, cubed

- Place Watermelon, Blueberries and Feta on top of the Arugula.
