This White Cheddar and Gruyere Macaroni and Cheese is the ultimate comfort food! I love homemade mac and cheese, and white cheddar and gruyere are the perfect combination!

- pasta, such as fusilli
- olive oil
- salted butter
- all-purpose flour
- milk
- gruyere
- white cheddar
- parmesan
- italian bread crumbs
- cooking spray

How To Make White Cheddar and Gruyere Macaroni and Cheese
What’s your favorite comfort food? I think mine might be macaroni and cheese! Honestly, once you make homemade you will never want to go back to store bought!
Let’s get started! Preheat the oven to 375. Cook pasta until al dente…or maybe even a little less. Drain and place in a large bowl and toss with olive oil and set aside.
In a medium to large saucepan, melt butter over medium heat. Stir in flour until combined to form a roux. Whisk in milk and bring to boil. Simmer at a low boil for 5 minutes continuously stirring so the mixture doesn’t burn or stick to the pan. If it’s boil too rapidly, lower the temperature.
After 5 minutes, remove from heat and stir in 2/3 of grated or shredded cheese until smooth. Then pour the cheese sauce over the pasta in the bowl. Toss until coated.
Pour pasta into greased 2.5 – 3 quart baking dish and top with remaining grated cheese. Then top with parmesan and bread crumbs.
Bake for 25 – 30 minutes or until bubbly and lightly browned. Serve immediately!!

- After 5 minutes, remove from the heat and stir in 2/3 of grated/shredded cheese until smooth.
- Pour cheese mixture over pasta in the bowl and stir until combined.
- Pour pasta into greased 2.5 – 3 quart dish.
- Top with remaining 1/3 of white cheddar and gruyere, parmesan and bread crumbs.
- Bake for 25 – 30 minutes until bubbly and lightly brown on top.
