White Cheddar and Gruyere Macaroni and Cheese

Ingredients

  • 16 oz pasta, such as fusilli
  • 2 tbsp olive oil
  • 4 tbsp salted butter
  • 1/4 cup all-purpose flour
  • 3 cups milk
  • 1.5 cups gruyere, grated or shredded
  • 1.5 cups white cheddar, grated or shredded
  • 1/4 cup parmesan, grated
  • 1/4 cup italian bread crumbs
  • cooking spray

Instructions

  1. Preheat oven to 375 degrees.
  2. Lightly grease a 2.5 to 3 quart baking dish and set aside.
  3. Cook pasta until al dente.
  4. Drain pasta and transfer to a large bowl, toss with olive oil, set aside.
  5. In a medium to large saucepan, melt butter over medium heat and then add the flour.
  6. Stir flour and butter until well incorporated.
  7. Whisk in the milk and bring to a boil, let simmer for 5 minutes continuously stirring so the mixture doesn’t stick.
  8. After 5 minutes, remove from the heat and stir in 2/3 of grated/shredded cheese until smooth.
  9. Pour cheese mixture over pasta in the bowl and stir until combined.
  10. Pour pasta into greased 2.5 – 3 quart dish.
  11. Top with remaining 1/3 of white cheddar and gruyere, parmesan and bread crumbs.
  12. Bake for 25 – 30 minutes until bubbly and lightly brown on top.
