- 16 oz pasta, such as fusilli
- 2 tbsp olive oil
- 4 tbsp salted butter
- 1/4 cup all-purpose flour
- 3 cups milk
- 1.5 cups gruyere, grated or shredded
- 1.5 cups white cheddar, grated or shredded
- 1/4 cup parmesan, grated
- 1/4 cup italian bread crumbs
- cooking spray
Instructions
- Preheat oven to 375 degrees.
- Lightly grease a 2.5 to 3 quart baking dish and set aside.
- Cook pasta until al dente.
- Drain pasta and transfer to a large bowl, toss with olive oil, set aside.
- In a medium to large saucepan, melt butter over medium heat and then add the flour.
- Stir flour and butter until well incorporated.
- Whisk in the milk and bring to a boil, let simmer for 5 minutes continuously stirring so the mixture doesn’t stick.
- After 5 minutes, remove from the heat and stir in 2/3 of grated/shredded cheese until smooth.
- Pour cheese mixture over pasta in the bowl and stir until combined.
- Pour pasta into greased 2.5 – 3 quart dish.
- Top with remaining 1/3 of white cheddar and gruyere, parmesan and bread crumbs.
- Bake for 25 – 30 minutes until bubbly and lightly brown on top.
