How To Make White Chocolate Cranberry and Pistachio Bars
Bars are one of my favorite things to make, whether it’s cookie bars or brownies. They are so easy, one bowl, one pan, bake and done!
Let’s get started! Preheat oven to 350 degrees and lightly grease a 13 x 9 casserole dish or glass baking dish with cooking spray, set aside. In a large bowl, mix the softened butter, softened cream cheese and sugar with a hand mixer until smooth.
Beat in the egg and vanilla extract until completely incorporated. Then mix in the baking powder, baking soda and all-purpose flour. Lastly, stir in by hand the white chocolate chips, chopped pistachios and dried cranberries with a wooden spoon or spatula reserving some to sprinkle top before baking.
Spread the mixture into the lightly greased 13 x 9Â casserole dish or glass baking dish. The mixture will be thick you may need to use a butter knife to spread. Then top with the remaining white chocolate chips, pistachios and dried cranberries.
Bake for 20 – 23 minutes, checking with a toothpick at 20 minutes for doneness. If the toothpick isn’t clean, continue baking for 1-2 minutes at a time until done. Let cool for about 15 minutes before cutting.

Ingredients
- 3/4 cup salted butter, softened
- 4 oz cream cheese, softened
- 1 1/2 cups granulated sugar
- 1 large egg
- 2 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 1/2 cups all-purpose flour
- 11 oz white chocolate chips
- 1 cup dried cranberries, roughly chopped
- 1 cup pistachios, roughly chopped
Instructions
- Preheat oven to 350 degrees.
- Lightly grease a 13 x 9 baking dish or pan.
- In a large bowl, beat together the butter, cream cheese and sugar.
- Beat in the egg and vanilla.
- Beat in the baking powder, baking soda and flour.
- Stir in by hand the white chocolate chips, pistachios and dried cranberries. (reserve a bit of each for the top)
- Spread the mixture into the greased baking dish.
- Top with the reserved white chocolate chips, pistachios and dried cranberries.
- Bake for 20 minutes, check with a toothpick, if not clean, add one minute at a time until clean.
