The parchment is not required but I love how easy it makes the cleanup. In a large mixing bowl, combine the butter, light brown sugar, and granulated sugar. Beat these together until the mixture is light and creamy.
Next, add the eggs and vanilla extract. Continue beating until the mixture is smooth and well blended.


Now, incorporate the dry ingredients: flour, oats, baking soda, baking powder, and salt. Beat until everything is evenly combined and the dough begins to take shape.
Switch to a spatula or wooden spoon and gently fold in the dried cranberries and white chocolate chips by hand. This ensures they’re evenly distributed without overmixing the dough.
Using a large cookie scoop, drop heaping tablespoons of dough onto an ungreased cookie sheet. With the back of a measuring cup, press each mound slightly to flatten.


Place the tray in the oven and bake for about 12 minutes, or until the cookies are lightly golden around the edges.
