These cheesy Beef Enchiladas are an easy way to bring your favorite Mexican dish home. This shortcut recipe can be ready in less than an hour and will easily become a new favorite to add to your dinner rotation.

How To Make Beef Enchiladas:
This Beef Enchiladas recipe is super simple and can be made with only few ingredients! This is a half recipe, for a whole recipe double the ingredients.
In a large skillet, begin to brown the ground beef. Add in the chopped onions, garlic powder, salt and pepper. When beef is almost browned, add in the diced green chilis, if desired. I like to add some type of chilis or spice to the beef but it is not for everyone, so dress it up as you like!
Make sure you have set your oven to preheat at 350 degrees. Now, once the ground beef is cooked through, measure out 1/4 cup of ground beef mixture into a tortilla. Fold the top over the middle and then the bottom over the middle like an envelope.
Place seam side down in your casserole dish. Then continue with remaining beef and tortillas. This recipe makes 6 enchiladas but you can easily double it to make a dozen.
Pour the enchilada sauce over the top of the wrapped tortillas and then top with the shredded cheese.
Bake for 15 – 20 minutes or until the cheese is bubbly. Serve immediately! Or this also makes great meal prep, separate the enchiladas into freezer safe containers.

- 1/2 cup yellow or white onion, chopped
- 4.5 oz diced green chilis (Optional)
- 1/2 tsp garlic powder
- 10 oz enchilada sauce

- 6 tortillas
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 350 degrees.
- In a large skillet, add ground beef, onion, garlic powder, salt and pepper.
- When the ground beef is starting to brown, add the green chilis, if desired.
- When the beef is cooked through, remove from heat.
- Taking one tortilla at a time, measure a 1/4 cup of ground beef into the center and fold the tortilla like an envelope.
- Place in casserole dish, seam side down. Continue with remaining tortillas and ground beef.
- Pour enchilada sauce evenly over top of rolled enchiladas.
- Top with shredded cheese.
- Bake for 15 – 20 or until cheese is bubbly.
- Serve immediately.
