Beef Stroganoff Skillet

Ingredients

  • 1 lb lean ground beef
  • 2 cups white button mushrooms, sliced
  • 16 oz egg noodles
  • 29 oz beef broth or beef stockĀ 
  • 3/4 cup light sour cream
  • 1 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/4 tsp sea salt
  • 1/4 tsp black pepper

Instructions

  1. Heat olive oil in large skillet over medium-high heat.
  2. Add ground beef, minced garlic, salt and pepper.
  3. Break apart and stir until beef almost cooked.
  4. Add mushrooms and cook until mushrooms have cooked down and beef is completely cooked through.
  5. Add egg noodles and beef broth, cover and let simmer for 5 minutes.
  6. Stir in sour cream and cover for another 10 minutes.
  7. Garnish with grated cheese if desired.
  8. Serve immediately!
  9. Enjoy!

Notes

  • I used lean ground beef, so I didn’t need to drain the beef after cooking.
