- 1 stick salted butter, melted and cooled
- 1 cup granulated sugar
- 3 large eggs
- 15 oz ricotta cheese
- 1/2 tsp lemon extract
- 1 Zest of a lemon
- 1 1/2 cups all-purpose flour
- 2 tsp baking powder
- 1 cup blueberries
Instructions
- Preheat oven to 350 degrees.
- Lightly grease a 9 inch round cake pan and set aside.
- In a large bowl, beat together butter and sugar.
- Add in the eggs, ricotta, lemon extract and zest of one lemon, mix until combined.
- Then beat in the flour and baking powder.
- Fold in the blueberries by hand.
- Spread batter in greased cake pan.
- Bake for 50 – 60 minutes until toothpick comes out clean.
- Cool before removing from pan.
- Sprinkle with powdered sugar, if desired.
