Blueberry Lemon Ricotta Cake

Instructions

  1. Preheat oven to 350 degrees.
  2. Lightly grease a 9 inch round cake pan and set aside.
  3. In a large bowl, beat together butter and sugar.
  4. Add in the eggs, ricotta, lemon extract and zest of one lemon, mix until combined.
  5. Then beat in the flour and baking powder.
  6. Fold in the blueberries by hand.
  7. Spread batter in greased cake pan.
  8. Bake for 50 – 60 minutes until toothpick comes out clean.
  9. Cool before removing from pan.
  10. Sprinkle with powdered sugar, if desired.
  11. Enjoy!
