This Blueberry Pancake Ring is perfect when hosting a brunch or for an afternoon snack! It’s great if you love pancakes but are short on time! Try for breakfast meal prep, just bake, slice, store and grab a piece on your way out the door!

- pancake mix (such as bisquick)
- milk
- quick oats
- large eggs
- baking powder
- vanilla extract
- blueberries
- cooking spray
- maple syrup

How To Make A Blueberry Pancake Ring
This pancake ring is so easy to throw together! A simple and quick breakfast on the table in 30 minutes!
Pre-heat oven to 350 degrees and lightly grease a bundt pan with cooking spray. In a large bowl, add all the ingredients except the blueberries.
Mix together using a hand mixer or a wooden spoon. Then stir the quick oats. Arrange the blueberries in the bottom of the lightly greased bundt pan. Lightly toss the blueberries in a sprinkle of flour before placing in the bottom of the pan so they don’t stick.
Pour the batter over top of the blueberries. Bake for 20 -25 minutes. Use a toothpick to test if baked at the 20 minute mark.
Remove from oven and turn out onto plate. Garnish with sprinkled powdered sugar if desired. Slice and serve with maple syrup!

Notes
- I used skim milk, but you can use whole or low fat milk as well.
- I used fresh blueberries, but frozen also work well when it’s not blueberry season.
- If you find the blueberries stick to the pan a little, you can toss them in a little flour before adding them to the pan.
