Blueberry Pancake Ring

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Lightly grease a bundt pan with cooking spray.
  3. In a large bowl, mix all the ingredients together except the blueberries.
  4. Arrange the blueberries on the bottom of the bundt pan. Lightly toss the blueberries in a sprinkle of flour before placing in the bottom of the pan so they don’t stick.
  5. Pour batter over blueberries.
  6. Bake for 20 – 25 minutes.
  7. Turn out ring on to plate and sprinkle with powdered sugar.
  8. Serve immediately with maple syrup.
  9. Enjoy!

Notes

  • I used skim milk, but you can use whole or low fat milk as well.
  • I used fresh blueberries, but frozen also work well when it’s not blueberry season.
  • If you find the blueberries stick to the pan a little, you can toss them in a little flour before adding them to the pan.
