- 2 cups pancake mix (such as bisquick)
- 1 cup milk
- 1 cup quick oats
- 2 large eggs
- 2 tsp baking powder
- 1 tsp vanilla extract
- 1 cup blueberries
Instructions
- Pre-heat oven to 350 degrees.
- Lightly grease a bundt pan with cooking spray.
- In a large bowl, mix all the ingredients together except the blueberries.
- Arrange the blueberries on the bottom of the bundt pan. Lightly toss the blueberries in a sprinkle of flour before placing in the bottom of the pan so they don’t stick.
- Pour batter over blueberries.
- Bake for 20 – 25 minutes.
- Turn out ring on to plate and sprinkle with powdered sugar.
- Serve immediately with maple syrup.
- Enjoy!
Notes
- I used skim milk, but you can use whole or low fat milk as well.
- I used fresh blueberries, but frozen also work well when it’s not blueberry season.
- If you find the blueberries stick to the pan a little, you can toss them in a little flour before adding them to the pan.
