This Brioche French Toast Bake is perfect for a weekend breakfast or brunch! It’s all the goodness of french toast in one dish and can be on the table in less than an hour!

How To Make Brioche French Toast Bake

I love brioche! Although you can use other breads to make french toast, there is just something about brioche. It’s a little softer than traditional french bread but works great for french toast! Cut the loaf into 1 inch cubes and place in a lightly greased large casserole dish.

In a medium bowl, whisk together the egg, milk and two teaspoons of the cinnamon. I used a large (4 cup) measuring cup, it made it easier to pour into the dish.

Pour the egg mixture evenly over the brioche.

In a small bowl or measuring cup, melt the butter. Then mix in the brown sugar and cinnamon.

Drizzle the butter mixture on top the brioche.

Bake for 35 – 40 minutes at 350 degrees or until the top is browned. I like mine a little crispy. Sprinkle the Brioche French Toast Bake with powdered sugar if desired. Serve immediately with maple syrup.

Ingredients

Scale
  • 1 loaf brioche, cubed
  • 5 large eggs
  • 1 1/2 cups milk
  • 2 tsp ground cinnamon

Topping

  • 1/4 cup salted butter
  • 2 tbsp brown sugar
  • 1 tbsp ground cinnamon

Instructions

  1. Pre-heat oven to 350 degrees.
  2. Lightly grease a large casserole or 9 x 13 pan with cooking spray.
  3. Cut the brioche into 1 inch cubes and place in dish in an even layer.
  4. In a medium bowl, beat the eggs, milk and cinnamon.
  5. Pour mixture over brioche.
  6. In a small bowl, mix melted butter, brown sugar and cinnamon.
  7. Drizzle over brioche.
  8. Bake for 35 – 40 minutes or until the top in nicely browned.
  9. Serve immediately with syrup.
  10. Enjoy!
