Broccoli Cheddar Macaroni and Cheese

This Broccoli Cheddar Macaroni and Cheese is the perfect weeknight meal! Not only is it easy, but it comes together in less than 30 minutes! Broccoli and pasta noodles smothered in a creamy cheddar cheese sauce! Add a protein or keep it vegetarian!

Ingredients Needed For Broccoli Cheddar Macaroni and Cheese:

  • Pasta (Any Shape You Like)
  • Milk
  • Salted Butter
  • All-Purpose Flour
  • Shredded Cheddar Cheese
  • Broccoli Florets
  • Salt and Pepper

How to Make Broccoli Cheddar Macaroni and Cheese:

The recipe outlined below is for 4 servings, if you would like a larger portion double the recipe. This works great as a main dish and as a side.

Cook the pasta according to instructions. I used Radiatori just because I think the shape works well for mac and cheese. Use whatever you have on hand, I change it up.

At this point, you can steam the broccoli too. The cheese sauce comes together pretty quickly. I used the steam in bag broccoli, which turns out perfect.

Ok, while the pasta and broccoli are cooking you can get started on the sauce if you wish, or just wait until the pasta and broccoli are done. Heat butter in a deep skillet or pot over medium heat. Sprinkle the flour over the butter and whisk together to form a roux.

Slowly whisk the milk into the roux. Continually whisking until the mixture is smooth and let come to a low boil. Let the boil simmer for 2 – 3 minutes. You want the milk to thicken up a little. Then whisk in the shredded cheddar cheese until smooth.

Lastly, add the cooked pasta and broccoli, toss until combined with the cheese sauce. So easy! Serve immediately!

Ingredients

Scale
  • 4 oz pasta (any shape), cooked
  • 1 tbsp salted butter
  • 1 tbsp all-purpose flour
  • 1 cup milkĀ 
  • 8 oz shredded cheddar cheese or cheddar cheese mix
  • 8 oz broccoli florets (steam in bag)
  • salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions, drain and set aside.
  2. Steam broccoli and set aside.
  3. Melt butter in a deep skillet or saute pan over medium heat.
  4. Sprinkle the flour over the butter and whisk together to form a roux.
  5. Slowly whisk the milk into the roux.
  6. Continually whisking until the mixture is smooth and let come to a low boil.
  7. Whisk in the cheddar until smooth.
  8. Add the pasta and broccoli and toss until combined.
  9. Serve immediately!
