How to Make Buckeyes:
These Buckeyes are super easy to make! In a large bowl, beat together the softened butter and peanut with a hand mixer. Then beat in the powdered sugar. The mixture should come together.
Now, depending on how many you want to make, use a teaspoon or tablespoon size cookie scoop to make balls. Take one scoop and then roll to make a ball.
Place the peanut butter balls on a parchment lined cookie sheet. Continue until you have used all the peanut butter mixture. Now freeze or refrigerate for at least an hour.
When ready to dip in chocolate, heat chocolate chips over a double boiler with the paraffin wax. Stir over a medium heat until everything is melted.
Once melted, poke a peanut butter ball with a toothpick and dip into the chocolate. Let drip for a second or two and then place it back on the parchment. Continue until all balls have been dipped. Place back in the refrigerator or freezer until solid.
Refrigerate or freeze in an airtight container. Enjoy!!
