This Leftover Candy Cookie Cake is the perfect use of that leftover holiday candy! Gather all your extra chocolate candies and bake a cookie that is sure to please at your next gathering!

  • salted butter
  • light brown sugar
  • large eggs
  • vanilla extract
  • all-purpose flour
  • baking soda
  • sea salt
  • assorted candy

How To Make Leftover Candy Cookie Cake

First, gather your leftover candy. I found it easier to break or chop it into smaller pieces, set aside.

Preheat the oven to 350 degrees. In a large microwave safe bowl, or in a glass measuring cup, melt the butter.

Next, add light brown sugar to the melted butter and beat together using an electric hand mixer. Then add eggs and vanilla extract and mix.

Finally, beat in the flour, baking soda and sea salt. Mixture should be a little thick. Lastly, stir in the candy with a spatula or wooden spoon.

Now, spread the batter evenly into a cast iron skillet, or a lightly greased pie dish or square baking dish. Bake for about 25 minutes, checking with a toothpick.

Serve warm or slice and store in airtight container.

Ingredients

Scale
  • 3/4 cup salted butter, melted
  • 1/2 cup light brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 tsp baking soda
  • 1/4 tsp sea salt
  • 2 cups assorted candy

Instructions

  1. Pre-heat oven 350 degrees.
  2. Unwrap and break or chop candy and set aside.
  3. Melt butter in microwave safe bowl.
  4. In large mixing bowl, blend melted butter and light brown sugar.
  5. Add eggs and vanilla extract. Mix well.
  6. Add flour, baking soda, salt and blend until completely blended.
  7. Stir in candy.
  8. Spread into cast iron skillet.
  9. Bake for 25 minutes.
  10. Enjoy!
