How To Make Cheddar Macaroni and Cheese
The recipe outlined below is for two servings, if you would like a larger portion double the recipe.
Cook the pasta according to instructions. I used Pipe Rigate just because I think the shape works well for mac and cheese. Use whatever you have on hand.
While that’s cooking, heat butter in a deep skillet or pot over medium heat. Sprinkle the flour over the butter and whisk together to form a roux.
Slowly whisk the milk into the roux. Continually whisking until the mixture is smooth and let come to a low boil. Let the boil simmer for 2 – 3 minutes. You want the milk to thicken up a little. Then whisk in the shredded cheddar cheese until smooth.
Lastly, add the cooked pasta and toss until combined with the cheese sauce. So easy! Serve immediately!!
