These Chocolate Biscotti are perfect with a cup of tea, coffee or hot cocoa! The addition of chocolate chips makes a wonderfully rich spin on the traditional biscotti. Plus, they are so easy to make!
Preheat oven to 375 degrees and line a sheet pan with parchment.
In a large bowl, cream together the softened butter and sugar with an electric hand mixer. Beat in the eggs one at a time and then add in the dry ingredients. The batter will be stiff. Stir in the mini chocolate chips by hand.
Divide the batter in half and shape into 8x2x1 logs. Place the logs onto the parchment lined sheet pan. Leave enough space for the logs to expand., about 3 – 4 inches.
In a small bowl, whisk the egg yolk and water. Brush the tops of the logs with the egg wash.
Bake for 20 – 25 minutes. Remove from oven and cool for 30 minutes.
Using a serrated knife, slice the logs diagonally into one inch slices. You should get about 15 slices per log.
Return the sliced Chocolate Biscotti to the parchment lined sheet pan laying the pieces on one side. Bake for 10 minutes then flip to the other side. Bake for another 10 minutes.
Cool and store in an airtight container.

Instructions

- In a large bowl, beat together the butter and sugar with an electric hand mixer until smooth.
- Beat in the eggs, one at a time.
- Then beat in the vanilla.
- Lastly, beat in the dry ingredients, flour, cocoa and baking powder.
- Stir in the chocolate chips by hand.
- Split the dough in half and shape into rectangular logs, approx. 8x2x1 in size.
- In a small bowl, whisk together the egg yolk and water.
- Brush the tops of the logs with the egg wash.
- Bake for 20 – 25 minutes.
- Remove from oven and cool for about 30 minutes.
- Using a serrated knife, slice the logs into 1 inch slices diagonally .
- Arrange all the slices on the baking sheet on their sides.
- Bake for 10 minutes then flip to other side, bake another 10 minutes.
- Let cool completely and store in an airtight container.
