Chocolate Cheesecake Bars

These Chocolate Cheesecake bars are so rich and fudgy and perfect to serve with a side of berries and a latte. Made with dark chocolate and chocolate chip cookie crust, even non-cheesecake lovers will love them!

Preheat oven to 350 degrees. Line a 9 x 9 pan with parchment.

Place half a roll of refrigerated cookie dough lining the bottom of the pan.

Press the cookie dough into the bottom of pan. Making an even layer. Set aside.

In a large bowl, add cream cheese and sugar. Beat with a hand mixer until blended.

Add eggs, vanilla, flour and melted chocolate chips.

Blend until completely mixed and smooth.

Spread mixture on top of cookie layer. Bake for 30 minutes.

Let cool completely and refrigerate.

Slice and serve with fresh fruit, whipped topping or alone!

Ingredients
  • 1/2 roll Refrigerated Chocolate Cookie Dough
  • 16 oz Cream Cheese
  • 1/2 cup Granulated Sugar
  • 2 Eggs
  • 1 cup Dark Chocolate Chips (Melted)
  • 2 tbsp All Purpose Flour
  • 1 tsp Vanilla Extract
Instructions
  1. Preheat oven to 350 degrees.

  2. Line a 9 x 9 pan with parchment.

  3. Slice half a roll of the refrigerated cookie dough and line the bottom of the 9 x 9 pan.

  4. Press cookie dough into bottom of pan, making an even layer.

  5. In a large bowl, beat cream cheese and sugar.

  6. Add eggs, flour, vanilla and melted chocolate chips and beat until completely smooth.

  7. Spread mixture on top of cookie layer.

  8. Bake for 30 minutes.

  9. Let completely cool and store in refrigerator.

  10. Slice and Enjoy!

Recipe Notes
  • I let my bars cool completely and stored in the refrigerator overnight before cutting.
  • Semi-sweet can be used instead of Dark Chocolate. The color will not look as rich but it will still taste delicious.
