- 6 cups All-Purpose Flour, sifted
- 3 tsp Baking Powder
- 6 Large Eggs
- 9 tbsp Butter, melted
- 1 cup Granulated Sugar
- 1 oz Anise Extract
- 1 oz Lemon Extract
- 2 tsp Lemon Rind
Glaze
- 2 cups Powdered Sugar, sifted
- 1 tsp Lemon Extract
- 1/2 tsp Butter, softened
- 3 tbsp Water
Instructions
- Preheat oven to 400 degrees and line a sheet pan with parchment.
- In a large bowl, sift together the flour and baking powder, set aside.
- In another large bowl, beat eggs with an electric hand mixer until foamy.
- While beating, gradually add the sugar.
- Then add the flour and butter alternating, and end with flour.
- Mixture will be thick, you will probably need to stir in the last of the flour by hand.
- Add in the lemon, anise and lemon rind and mix well.
- Scoop out dough, form into one inch balls and place on sheet pan.
- Bake for 7 – 8 minutes.
- Cool on wire rack and continue with remaining dough.
- Cool cookies completely before glazing.
Glaze
- In a medium bowl, mix all the glaze ingredients together by hand.
- If glaze is too thick, add a little more water.
- Glaze the tops of the cookies and garnish with sprinkles if desired.
